Breakfast is my favorite meal of the day. My hippy hash egg combos have evolved over the years. I love playing with flavors and using eggs as a vehicle for flavor and of course, more olive oil. For Indian flavored eggs, I have made scrambles with saag paneer leftovers or methi masala mixtures my mother-in-law uses to make the rest of the family theplas (Indian spicy flatbread). When I was in college I scrambled in marinara sauce and mozzarella or salsa and cheese. For a Mediterranean omelet, throw in mushrooms and peppers and toss basil and feta cheese on top. And for an Everything Bagel flavor make your eggs any style and sprinkle the Everything but the Bagel spice (from Trader Joe’s) on it with avocado on the side.

My ultimate current favorite nightshade free & keto scramble includes avocado, sweet potatoes, bok choy or arugula, micro greens, mushrooms, Pasolivo Tuscan olive oil and Capitol Hill Seasoning from the Savory Spice Shop. I purchase my eggs from the farmer’s market every week. I find eggs that are pasture-raised, and also organic from chickens who only eat vegetables and bugs. Never grain or corn fed. My favorite local eggs from from Menos Farms, Da-Le Ranch and Lily’s Eggs. You can find them at either the Laguna Hills, SoCo or Irvine markets. Their eggs are fresh, meaning they were laid within 1-2 days before purchase. If you don’t have a local farmer, you can get good quality eggs from Vital Farms who sell at Sprouts and Whole Foods. You want their pasture-raised eggs organic eggs. You can tell the difference between good quality fresh eggs by looking at the color of the yolk. Pasture-raised fresh eggs have an orange yolk - like the ones you see in Japan. And they taste amazing.

The Matrix:

  • Whole eggs - choose your style

  • Choose a green and saute: bok choy, arugula, collard greens, fenugreek leaves, spinach….

  • Micro greens

  • Sliced or mashed avocado

  • Flavor/spice: Capitol Hill Seasoning, Everything but Bagel, dill & shallot, salt & ground pepper….whatever you love…

  • Roasted sweet potato and mushrooms.

I roast a sheet pan of sweet potato and mushrooms every weekend and sprinkle them into several meals a day. Sweet potatoes are a good carb, a resistant starch. They contains vitamins, minerals and fiber, which is essential when you are grain free. Dr. Gundry also recommends we eat 2 cups of mushrooms per week for longevity.

Saute your greens. Scramble your eggs and then add the rest on top. Drizzle olive oil on top along with a sprinkle of your spice of choice. You can either cook the greens and veggies into your omelet or make it all separate so that everyone in the family can choose their combinations.

This recipe is anti-inflammatory if you choose pasture-raised eggs. It’s also keto with only a tiny bit of carbs from the small amount of sweet potatoes. It fills you up and I am generally not hungry again until late afternoon or even dinner with only a small snack in between. The polyphenols in olive oil and mushrooms are great longevity ingredients. And the eggs, avocado and olive oil are super healthy fats that will raise your HDL cholesterol.

If you aren’t worried about inflammation, add nightshades like red peppers and cheese to the mix. For your cheese loving family members sheep and goat cheese are favored over cow-milk based cheeses. You can also add some sourdough bread and make an avocado & egg toast. If your kids don’t like the taste of eggs, pairing each bite with sweet potatoes or the Everything but Bagel spice will make it not only palatable, but also enjoyable.
